On the 9th day of Christmas, my true love gave to me more indulgent food to tempt and tease.
My girdle and belt has long since stretched & busted
but I simply must try the some custard.
Today’s theme is a recipe for dessert. While chocolate anything is my favorite hands-down winter, once in a while I like something else. My palate does sometimes crave another flavor beyond the plethoria of chocolates. So this beauty pictured above is called Orange-Pumpkin Custard.
Now, I love custard almost as much as I love chocolate. Or cheesecake. And pumpkin is usually a safe bet with my palate as well. And even better, this delectable dessert is made in my all time favorite kitchen necessity–the slow cooker! What more can you ask for? A creamy dessert made with the ease of a slow cooker. Yummmmmm.
2 slightly beaten eggs
1 cup canned pumpkin
1/2 cup sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon finely shredded orange peel
1/4 teaspoon ground allspice
1 12-ounce can evaporated milk
Opt: whipped cream and toasted chopped pecans
1. In a large mixing bowl, combine eggs, pumpkin, sugar, cinnamon, orange peel and allspice. Stir in evaporated milk. Pour into a 1 quart soufflé dish. Cover the dish tightly with foil.
2. Tear off two 15X 6 inch pieces of heavy foil. Fold each piece in thirds lengthwise. Criss cross the strips and place the soufflé dish in the center. Bringing up the foil strips, lift the ends of the strips and transfer the dish and foil to a 3 1/2 to 5 quart crockery slow cooker. (Leave foil strips under dish) Pour warm water into the cooker around the dish to the depth of 1 1/2 inches.
3. Cover, cook on LOW heat about 4 hours, or until a knife inserted near the center comes out clean.
4. Using the foil strips, carefully lift the dish out of the cooker. Let stand 20 minutes. Serve warm or chilled. If desired, top each serving with a dollop of whipped cream and pecans. Makes 4 servings.
